My cooking experiments don't always - ok, usually - turn out all that well. However, the pseudospanikopita I made this evening from feta cheese, philo dough and the left-over sautéed spinach from Thanksgiving dinner turned out lovely and delicious.

I'm trying to have a sit-at-the-table-type dinner every other night or so, even if it's just eating the peanut butter crackers at the table instead of in front of the computer. Having my mom to share meals motivates me more toward setting aside time for meals-as-such, including apparently some preparations beyond what I'd normally undertake. Wacky.

Anyway, I'm inordinately pleased that my experiment was actually tasty. Go me!
